HFCS is a sweet, clear and odorless liquid manufactured by controlled hydrolysis of starch polymers, resulting in high fructose compositions with valuable bulk sweetening profiles. It exhibits less tendency to crystallize at low temperatures due to its lower dextrose and higher fructose level.
