Xanthan
Gum USP / NF
Xanthan Gum is an exocellular heteropolysaccharide produced
by fermentation. It has a unique polymeric structure where chains
tends to associate forming a complex network gel-like structure.
When shear is applied, these hydrogen bonds are disrupted and
a flowable liquid is produced. The process reverses when shear
is removed. Hence, Xanthan Gum solutions exhibit extremely high
viscosity at rest and very low viscosity when force is applied. |
